Knock on Wood is a traditional Caribbean-style amber rum with equal parts sugar cane to molasses in the mash bill. She is the product of a beautiful marriage between the lighter toffee, caramels, and vanillas from the sugar cane and the powerful burnt sugar and bitter flavours of the molasses.
Our rums are made in extremely small batches, carefully mashed, fermented, and distilled in the same manner as they do in the islands. We also use the very flavourful dunder - what's left in the still after the alcohol has been distilled out - to start our next mashes. And since we don't distill our rums to a very high proof, 78% abv. max, the spirit is insanely flavourful, warm, and, quite frankly, delicious.
Along with importing sugar cane and molasses from the Caribbean, we also follow Caribbean traditions in how we age our rums for a minimum of one year, although most will be aged a lot longer.
